Paula Frey

With over 20 years’ experience in the hospitality industry, Paula is a commercially focused revenue leader who fully values the need for big data in making quick decisions to drive revenue across all streams, both rooms and ancillary. She is a passionate traveller, and loves the industry for its opportunities to build relationships with so many different teams, C-Suite and owners. She has worked for some of the world’s leading hotel brands including Mandarin Oriental, Dorchester Collection and Corinthia Hotels Limited, where she has driven teams through change processes, instilling a revenue-first management culture and achieving higher performance, increasing the bottom line. She has extensive experience implementing systems such as Tablaeu, DataVision and PMS and installing new processes to ensure they are used to maximum efficiency.

With her finger on the pulse keeping up to date with new tools and technologies that become available, she is the person to guide you to the solution that works for your business.

Dermot Herlihy

Dermot joins Paula Frey Consulting with 20 years’ experience spanning the globe having worked in his native Ireland, Switzerland, the US, Maldives, UAE and most recently Malta. A graduate of Shannon College of Hotel Management, Dermot started out his career in rooms operations and transitioned into the commercial world with a particular emphasis on revenue management and digital.  Strengthening his knowledge, he pursued a Master’s in Business Science in Business Practice from the Irish Management Institute. From his travels he is a global networker, and with a love of travel he looks to try the new and different.

He has worked for leading boutique organisations such as Corinthia Hotels, Crown & Champa Resorts Maldives, Mount Juliet Estate, Viceroy Hotels & Resorts, Jumeirah Hotels & Resorts and MGM Grand. Dermot has been pivotal in implementing revenue management frameworks combining it with commercial strategic planning.  Combining his operational background and revenue expertise he has been instrumental in increasing bottom line revenues through total revenue management processes and culture in Spa, F&B and Conference & Events.

Sara McKinven Höök

Sara started off her hospitality career back home in Gothenburg, realising it was her passion after trying a variety of front of house roles. She decided to study Hospitality Management, and after graduating spent a few years in hotel operations in at Scandic Copenhagen, before heading back to Uni to complete her Bachelor of Art in International Hospitality at SHMS, Swiss Hotel Management School, Switzerland. She graduated with First Class Honours and in the top of her year.

This gave her the opportunity to specialise in revenue management at Corinthia Hotels Limited in their London HQ. After a few years there, Sara joined The Hoxton Hotels as a Revenue Manager. Over the last years Sara has had the opportunity to work on a wide portfolio of hotels, gaining a significant understanding for implementation of revenue management systems and other hotel systems, building and re-structuring standard operation procedures, and designing reports that supports hotel teams to maximise revenue.
